1 and 3/4 cup flour
3/4 cup sugar
2 tsp bsking powder
A pinch sakt
1 egg
1 cup milk, I used 2% fat milk
1/ 4 vegetable oil or melted butter
2 tsp grated lemon zest
1 tbsp freshly squeezed lemon juice
Mix flour, sugar , baking powder and salt together
In a separate bowl, whisk egg, oil, milk ,lemon zest and juice
together
Add the wet mix to the dry, and mix just enough to incorporate,
don't worry if mix is lumpy.
Pour in a buttered pan and bake for 40min.
Use a skewer to check if its done. Leave in pan to cool, before
removing. Enjoy.
